Malacca Chicken Rice
Ingredients :
1 whole chicken
1 1/2 tablespoon salt
1 tablespoon sesame oil
1 tablespoon margarine
2 clove garlic
4 bowls rice
1 tablespoon chicken powder
5 bowls water
Sauce :
2 tablespoon soya sauce
1 tablespoon sesame oil
1/2 tablespoon black soya sauce
2 slices of chicken stock
Blended chilli sauce :
200 g red chillies
12 chilli padies
70 g young ginger
50 g garlic
juice of 8 small limes
peels of 3 limes
salt to taste
chicken stock to taste
Boil ingredients until cooked, then remove chicken and rub sesame oil on skin. Next, stir fry garlic and rice in margarine, add in chicken powder, then stir fry evenly before pouring water and bring to boil. When steam appears, reduce heat to low and boil for another 12 to 15 minutes. Remove rice and press into small balls. Cut chicken into small pieces and pour sauce on top and serve with chilli sauce.
